Dessert On A BBQ? Because You Can!
Picture the scene, it’s a beautiful warm summers eve, you’re sat in the garden enjoying the company of friends, you’ve had a beautiful meal and you want something sweet to finish things off with. In the fruit bowl you just happen to have a pineapple, there’s a pot of yoghurt in the fridge and some mint left over from the mojito’s. There’s even a little granola left in the cereal cupboard!
This dessert is extremely simple yet impressive when served, and takes literally moments to prepare. The pineapple could be prepared ahead of time and grilled off when required. For me there’s something about the combination of the warmth from the pineapple, the refreshing coolness of the mint yoghurt and the crunch of the granola that’s really quite satisfying. There is always a place for chocolate stuffed bananas wrapped in foil and baked, but this dessert is just a little bit more summery and refreshing.
